A buddy of mine perfected this appetizer a few years ago, looks like tree rat is appreciated here, so I'll share his recipe.
As an appetizer/snack 1 squirrel person works well. A stock pot will be needed if you don't have a pressure cooker. I use a stock pot so that will be how I instruct from this point.
Cut squirrel into six pieces
Bring water to a boil (large enough to submerge squirrel(s)
Add squirrel to pot add salt, pepper and your favorite spices, cook till meat is falling off the bone
Pour pot contents into strainer, separate meat from bones, meat should be in slivers
Dredge meat in a salt, pepper and flour mix, I like to add cornmeal to my mix
Heat a skillet with cooking oil in it, your choice of oil
When oil is hot, add dredged pieces to hot oil and cook till both sides are browned
When cooked remove from skillet and set on paper towels to absorb excess oil
This is a basic recipe, be as creative as you would like to be.
I like to use hot sauces, bbq sauces and such when I serve this A stop by BW3 may be in order.
